Lorraine has been documenting the
"Gardians" or cowboys of Southern France since 2002 and has
had the opportunity to work with some wonderful chefs in the
Camargue region.
The Camargue is a multi-layered
society. The marsh land, wild birds, cattle, horses, rice,
salt, olives, food, wine and religion all play a crucial role
in the lives of everyone who live there. You can hardly have
